Eat This, Not That! Eat This, Not That! We met virtually to share some of our recipes from the quarantine area, to help one another through this challenging moment.
We’d like to show you our designs and how to make them.
1. Dark Chocolate Chip Banana Nut Bread
“I made my mom’s recipe, however I added chocolate chunks of dark. I believe chocolate makes everything better. Bake it at 350 degrees F for about 50 minutes. This will leave the top a little crispy but the inside soft and moist. The chocolate’s interior is delicious. Since there’s nothing better than having a small amount of both I’m usually heavy on the chocolate and walnuts. This bread is a comfort food and delicious.
“I was walking along on Sunday when I spotted my favourite restaurant for hummus open a marketplace to sell their goods which included their fresh and delicious pita bread. It made me want shakshuka. I could have prepared the ETNT version of shakshuka, or the Italian version egg-in-purgatory, however I chose to make my own using what I had in my pantry as well as fridge.
Sauteed onions and bell peppers, garlic, fire-roasted tomatoes, and four eggs. This breakfast is finished off with feta cheese as well as chopped parsley, and pita bread. To preserve my pita I kept them frozen and then toasted them when I needed it.
3. Philly Cheesesteaks
My mother cooked Philly Cheesesteaks with onions and bell peppers. Mama served the potatoes with the baked potatoes. I like to dip them into The organic mustard from Trader Joe’s. I also added mayonnaise and additional cheese on top of my cheesesteak to boost its flavor. To make it more vibrant, I added strawberries to my plate. The side note is that a toasted bun is 100 percent the best option.
4. Lentil Soup
“I have enjoyed lentil soup for lunch during my time working remotely. You can create it from scratch using the ingredients available in your pantry or you can buy it already made and freeze it. I am a huge Ina Garten fan. We actually share the same city. She’s started posting simple recipes on Instagram since the beginning of last week. My take on her Stewed Tomatoes & Lentils recipe was inspired by her recipe.
5. Grits + Toast + Egg
My husband and I have different working schedules are very different. My husband is usually asleep when he returns home in the evening, and I’m up by the time I start my day. Now that I work at home, we are able to have brunch together every morning before he goes to work. Breakfast will include bacon, eggs, fruits toast, sometimes grits. It’s not expensive, but it’s a chance to have fun together in a positive setting.
